Ingredients

  • 3/4 cup uncooked quinoa

  • 1/2 cup chopped kale

  • 1 sliced tomato

  • 1/4 cup cooked corn

  • 1/4 cup chopped red onion

  • 1/2 cup diced walnut

  • 1 cup cooked edamame

  • 1 cup shredded carrot

Dressing

  • 1 tablespoon Healthy Buddha Coconut Vinegar

  • 1/2 lime

  • 1 teaspoon olive oil

Instructions

  1. Cook quinoa according to package directions

  2. In a large bowl, mix the cooked quinoa, kale, tomato, corn, red onions, walnuts, edamame, and carrots

  3. Add in the coconut vinegar and the olive oil. Toss well.

  4. Top the salad with a squeeze of lime

  5. Enjoy!
