Avocado Toast with Chickpeas

 

Ingredients:

 

Instructions:

  1. Preheat the oven to 350 degrees F.
  2. In a small bowl, mix the coconut vinegar, paprika, lemon, and mustard.
  3. Pour the coconut vinegar dressing over the chickpeas and the cherry tomatoes on a baking sheet.
  4. Place the sheet in the oven and cook for 20 minutes.
  5. Spread the avocado on the toasted bread.
  6. Place the chickpeas and the cherry tomatoes on top of the avocado.
  7. Add sriracha coconut chips on top of your avocado toast to add an extra flavour.
  8. Take an Instagram or Pinterest picture, and you`re ready to go!
