- Preheat oven to 350 degrees.
- Place the coconut, oats, and pumpkin seeds in a large bowl and stir to combine.
- In a smaller bowl, whisk the coconut nectar, powdered peanut butter, non dairy milk, and vanilla until smooth.
- Pour the wet mixture into the dry and stir once more.
- Place the mixture onto a lined baking sheet, pressing clusters together with your fingers, and bake for 10-15 mins at 350, moving it around on the pan every 2-3 minutes to prevent burning.
